Creativa Coffee District (CCD) is a progressive Specialty Coffee Processor in Chiriqui, Boquete, Panama, where tradition meets innovation. By transforming a traditional wet mill and drying patio into a state-of-the-art facility, CCD elevates specialty coffee processing to an art form. About Post-harvest Process This lot is processed by Stefan Muller using the Chilled Cherry Anaerobic Natural method. Cherries are fermented in airtight steel tanks with a cold water circulation system, maintaining a consistent low temperature (around 15°C). This controlled environment allows for slow, thorough fermentation, maximizing sugar conversion and developing vibrant fruit flavours. After fermentation, the cherries are sun-dried separately on patios.

This whole meticulous process highlights the fruit's intensity and results in a clean, well-balanced, yet vibrant character. Expect the mellow floral Hibiscus, vibrant Peach sweetness, and crisp Red Apple to dance on your palate pleasantly.
