By replicating the digestive enzymes of civets through microbial fermentation, they produce coffee with complex, layered flavours. Thanks to the use of anaerobic fermentation and yeast inoculation to craft this micro-lot coffee that bursts with notes of Clementine, bright Passion Fruit acidity, and a hint of Sugarcane sweetness.
