You might wonder why this coffee is named Dukun Merapi. Do shamans produce it? Or is the farmer a family of shamans? Nope, none of that. Dukun is a district in Magelang, Central Java, so it's simply a designation of origin. This coffee comes from the western slope of the majestic Merapi Mountain, a relatively high altitude for Central Javan coffee.
This coffee is processed using a natural anaerobic method. This means that the whole coffee cherries are sorted to remove unripe ones, and then fermented in an oxygen-free container for 168 hours. Afterwards, the coffee cherries are sun-dried until they reach the desired moisture level, developing a more vibrant flavour profile.
The combination of its mixed varieties and meticulous processing method yields a distinctly unique coffee. When you sip it, you'll find a burst of fruitiness reminiscent of Lychee and Strawberry, followed by a lingering sweetness like Longan and Rambutan. Such an embodiment of crowd-pleasing daily coffee.
