Grown in Kintamani, Bali, at an elevation of 1200 MASL, this coffee originates from a cool highland landscape characterized by volcanic soil and steady mountain air. The region is renowned for its clean acidity and vibrant aromatic expression, qualities deeply rooted in its terroir. Local Cobra and Kopyol varieties thrive in these conditions, carrying a distinct sense of place that feels bright, expressive, and composed.
Ripe cherries are selectively handpicked, floated, and carefully sorted before entering a 72-hour anaerobic natural fermentation. Sealed from oxygen, the cherries ferment in a controlled environment that allows flavor to develop with clarity and precision. After fermentation, they are slowly dried on raised beds, then hulled to produce stable and consistent green beans ready for roasting.
In the cup, this coffee shows a clear, citrus-driven acidity with the depth of Blood Orange, layered with sweet Berries and a rounded Molasses sweetness. The body is smooth and steady, carrying a satisfying and lingering finish that feels refined and complete.
