The steep, green hills of Yirgacheffe look thickly forested at a glance, but they actually hide a bustling community of smallholder families growing what is locally celebrated as "garden coffee." On tiny plots of land, these households tend to be a mix of indigenous landraces and JARC varieties passed down through generations. The fertile soil and unique climate of the Gedeo Zone give these cherries the perfect environment to develop a remarkably deep and nuanced character.
The journey of this coffee is defined by meticulous care, starting with careful hand-picking before they arrive at the washing mill. The cherries are immediately floated and hand-sorted to ensure only the highest quality moves forward. After pulping, the beans undergo a 48- to 72-hour wet fermentation in concrete tanks to clean away the mucilage, followed by a slow drying phase on raised beds under the open sun. This traditional full-washed process is exactly what preserves the clarity and natural sweetness of the coffee.
From the moment you brew your first cup, the air fills with a stunningly aromatic floral blend of Jasmine and Lavender. This beautiful combination of aromas is then completed by the clean sweetness reminiscent of Sugarcane. It is a wonderfully refined and transparent expression of the Yirgacheffe terroir, offering a balanced profile that sits beautifully on the tongue.
