We are big fans of sweet and clean natural coffees like this coffee we got from Yolan Tirta, founder of Toduri Coffee. It has all the goodness that you can expect from natural coffees, full of fruit flavors yet comfortable to enjoy. This coffee is such a treasure with a smooth texture, mellow acidity, and clean finish.
This time the coffee we got came from Sumpang Romang, a village in Malino, South Sulawesi with an altitude of 1300 - 1500 meters above sea level. One of the highlights of this coffee is its variety, TYPICA. It is known as one of the oldest arabica varieties in the world. This variety has a sweet and complex cup profile. Another thing is, this coffee is produced carefully to ensure that the coffee chosen is ripe coffee cherries and they eliminate many defects. After picking, cherries are sorted and cleaned under running water to minimize the bacteria and eliminate many defects. Then, the cherries are slowly dried in a greenhouse for 40 days and then dried in the sun for 3-5 days. After drying, the coffee beans rest for 30-40 days before hulling.
Thanks to the carefully post-harvest process and its variety. This coffee has a depth of sweetness and is packed full of fruit flavors that reminds us with notes of POMEGRANATE, sweet PLUM, and layered with stone fruit acidity like NECTARINE.
