Sourced from 1400-1600 masl farm in the city of Bandung, this coffee brought a unique combination of Timor-Timur, Lini S-795, and Typica varietals. This coffee adopted the typical Colombian coffee process, natural anaerobic, to elevate the sweetness in the coffee. Skilled farmers carefully hand-sort the coffee cherries before a 108-hour fermentation period in barrels. Drying is a multi-step process: first under the sun for 3 days, then transferred to a greenhouse to achieve a consistent moisture content of 11% and develop a more vibrant flavor profile.
Thanks to this attentive post-harvest processing and the carefully chosen varietals, this coffee offers a truly captivating cup.
