Aji Bourbon Tropical Symphony
This Bourbon Aji coffee, from an Ethiopian Landrace mutation, achieves its unique flavor through a complex process. "Aji" refers to its spicy mucilage notes, but the ‘spiciness’ varies depending on processing. Nestor Lasso's unique processing method involves a 60-hour anaerobic fermentation, oxidation, and a final anaerobic fermentation with "Mosto," followed by rapid cooling and dehumidified drying. The result is a "Tropical Fruit Forward Lush" profile, with rich Cherry sweetness and a complex White Grape-like acidity, creating a multidimensional and prized taste.
