The Origin of Bourbon Aji
Nestor Lasso, a Colombian coffee visionary, has crafted a truly exceptional coffee experience with his Bourbon Aji that is grown in the fertile lands of El Diviso farm at Huila, Colombia which is renowned for the remarkable competition lots and various rare varieties of specialty coffees. Aji is a Spanish word that translates to "chili," and it refers to the spicy notes found in the mucilage of this coffee. Despite grown in Colombia, Bourbon Aji is a domesticated mutation of the Ethiopian Landrace variety.
About Post-Harvest Process
This wonderful coffee was processed Anaerobic natural, where coffee is meticulously sorted, directly fermented for more than 200 hours, and dried with a dehumidifier until it reaches 11% moisture. This combination of exotic variety and superb processing method results in intense fruity notes of Grape and Pomegranate, and bright acidity like Passionfruit. This well-balanced coffee, with a tea-like body and lingering finish, is a testament to El Diviso's commitment to quality.

Ombligon is a unique Colombian variety with Ethiopian roots and it shines through in its cup quality. The coffee cherry is uniquely shaped, resembling a belly button, which is why local farmers call it "Ombligon."
