Granja El Paraíso-92 is a family farm located in the Piendamo area of the Cauca Valley between 1800-2100 meters above sea level in Colombia. They have a 5 hectare farm involving innovative farming and processing run by Wilton Benitez and his brothers. With a background in chemical engineering, Wilton was the Mastermind behind their coffee processing and experiments. Granja El Paraiso 92 is widely recognized as one of the best coffee producers in the specialty coffee world and their coffees have been entered in barista competitions for several years. To create unique profile for their coffee in each variety and harvest, they integrated technology, genetics and processing system, and also have a commitment to the environment.
This coffee is selectively hand-picked then sorted by size and density to get the best quality coffee cherries. Sterilization with ozonated water and ultraviolet light is applied to remove any bacteria and inactivation of pathogenic organism. Then, cherries are submerged in water at 90 degree Celsius to accentuate the sweetness of the Cherries. Next, they go through anaerobic fermentation for 62 hours in fermentation bioreactors with a relief valve at a temperature of 20 degrees Celsius. In this phase, Saflager S-23 yeast is added to create unique spectrum of flavor. When fermentation is completed, cherries are dried for 88 hours at 40 degrees Celsius in a controlled environment.
With a strict selection of the coffee, carefully sterilization, and innovative method of processing, the result is beyond of our imagination. This coffee has amazing flavors that full of sweet, complex flavors with floral notes, that reminiscent us with sweet and distinct refreshing aroma like HOJICHA and SAKURA, emerge as the cup cools and featured with a rounded body and lingering STRAWBERRY acidity and sweetness.
