This coffee is the result of ongoing experiments conducted by our processor partners in Lintong Nihuta. Coming from the same farm as Lintong Green Mango, we tried to process this coffee differently. After picking and sorting, this coffee goes through two fermentations. First is the anaerobic fermentation of coffee cherries, then the fermentation of mucilage remaining after pulping.
We chose the honey process for this coffee because it does not require as much water as the washed process. On the other hand, this method is also less labor intensive than the natural processing method. How did it go? This process gives more body, texture, and fruity flavor. So, we can get the optimum flavor while we do not lose the character of the terroir of this coffee.
