Kayanza Goji Berry

This coffee brings our memories back to 2019, when we first released a coffee with the same name, Kayanza Goji Berry. It also has a special Goji Berry taste which is almost herbs-like but with nuance in berry sweetness. The interesting thing about this coffee is this coffee processed honey, while most of the process in Burundi is fully washed and natural. The intenso yeast added to fermenting cherries promotes a consistent, flavorful fermentation, creating a sweet and fruity coffee you will not want to miss. This coffee comes from Gakenke Washing Station, located in Gatara town, Kayanza Region, Burundi.

All cherries are selectively handpicked then sorted to remove under ripe and damaged cherries. Cherries are then pulped within 6 hours of delivery. Once pulped, coffee and remaining mucilage is laid on raised beds to dry and intenso yeast is added. The yeast is able to control the fermentation process against the risk of spoilage microorganisms that can generate undesirable defects. The longer fermentation time for yeast-processed coffees also allows for more developed flavors. While drying, parchment is repeatedly sorted and sifted to ensure even drying. The parchment takes on average 10 to 14 days to dry.

Thanks to its variety and fermentation process, this coffee has the character of African coffee with berry nuances and a high level of sweetness. The fermentation with intenso yeast leads us to give attention to the expression of fruity characteristics like GOJI BERRY clearly in the flavor. Reminds us of the sweetness of RAISINS and the creamy texture like NOUGAT. Such a true luxury kind of daily drink coffee.
