This exquisite coffee is sourced from Rantekarua, a breathtaking region in Tana Toraja, South Sulawesi. There, at an altitude of 1,200 - 1,600 meters above sea level, ideal growing conditions nurture the Lini S coffee varietal. So So Good Coffee Co. and Sulotco Jaya Abadi, a dedicated partnership known for its commitment to organic farming, meticulously cultivate these beans. Their practices ensure a healthy ecosystem and contribute to the exceptional quality of the coffee.
Once picked, the cherries are floated to remove any underripes and then pulped. Coffee is fermented in steel bins for 28-30 hours, washed in clean water, and fermented for an additional 48 hours. The coffee is washed again and then soaked for a final 12 hours in clean water. After that, the coffee is laid on raised beds, and workers rotate it regularly to ensure even drying.
Thanks to the processing method that allows the coffee’s intrinsic character to blossom, and brings us a clean flavour. Each sip unfolds with vibrant hints of PAPAYA, a touch of sweet MOLASSES, and a delightful acidity of BERRIES. This delightful coffee is the perfect fit for those who prefer a clean, balanced cup, with a sweetness that lingers and a pleasant acidity.
