Have you ever had Wush Wush coffee? If you haven’t, this coffee is a must-try. Wush Wush is a rare coffee varietal that originated in a small area named Wushwush, a fertile highland in the southwest of Ethiopia. Like Gesha, it went through the journey to South America. It was known as an heirloom varietal before. Wush Wush has a delicate floral and fruity notes and some distinctive tasting note range.
Sourced from El Zafiro, where farmers ensure the cherries picked for their production are 100% ripe. After being floated, coffee cherries are pulped. Then the coffee is inoculated with a local yeast isolated at La Cereza Research Center and fermented for 28 hours inside of a closed bioreactor. Once fermentation is complete, the parchment is washed, and placed in shaded African beds to dry slowly in the shade for about 28 days until they reaches the 11% moisture level.

Thanks to the rare variety and meticulous processing method, when you sip this coffee, you’ll be greeted by the super floral aroma of Jasmine and Orange Blossom, layered with Kiwi-like sweetness and acidity.
