Sumatran Coffee With Unconventional Process
This coffee is our attempt to do unconventional processing: Anaerobic Yeast Fermentation. It happened when we were in Lintongnihuta where almost every coffee was wet-hulled. Although nothing's wrong with wet-hulled coffee, the taste of this coffee wet-hulled just doesn't fit to ours. But we saw potential in the coffee. Our prediction was that if this coffee was processed in other way, it can be an amazing coffee and turned out our prediction was right.
The body and acidity characteristics are so special you can't find in many coffees. In the body you can find: White Chocolate, Cinnamon and Ginger and for the acidity: Green Mango, Tomato and Cranberry, something that you usually can only find in African coffee.
